Elgin is a unique region in South Africa’s Western Cape - the only one to be surrounded by mountains and officially the coolest, very rarely getting above 30°C during the height of the ripening season. The vines thrive in these conditions, having the perfect amount of stress to produce first-class grapes packed with flavour intensity and a broad spectrum of character. As a result, they are much sought-after, and this exclusive release combines super-crisp Sauvignon Blanc with a (very) old-vine parcel of Semillon.

You really need to focus on the small stuff in the vineyards through to the bottle because if you slip up on any part, the wine won't be any good. For me, wine is made in the vineyards and I'm just there to guide it into the bottle with limited intervention, keeping it pure and not fake.
