Production methods of this wine style are quite remarkable. The grapes are left on the vines way after the typical harvest date until the winter sets in and the grapes freeze. But only the water freezes so only the sugars and acids come through when crushed and pressed in this condition, so the extracted juice is uber concentrated. The result is an unctuous, decadent sweet wine with almost impossible balance from intense natural acidity. Incredible with rich desserts and will age for decades if you have the patience!
