The Wine The Wine
France
Region:Burgundy - Bourgogne
Domaine Denis Carré are the underdogs of Savigny-les-Beaune. By slowly accumulating vineyards all over Burgundy, they are rising in popularity by focusing on the vineyard and create wines that are a direct reflection of the vine. It is within this bottle that they have used their best old vines, ranging from 50-75 years old, to create a wine with exceptional concentration and complexity. With base notes of savoury spice becoming more pronounced on the palate followed by lashings of red fruit and juicy tannin, it is a great example of what is on offer from the old vines of Burgundy.
The Winemaker The Winemaker
Martial Carré
Son of Denis Carré, Martial learnt his winemaking flair from his father. By focusing on the vineyard to create the best quality fruit and using gentle winemaking techniques to preserve purity of flavour, he is seen as one of the rising stars of Burgundy. After his father handed over the reins to the Domaine to Martial and his sister, their wines have got better year on year.
"The selection of fruit is particularly fine here, accounting for the wine's lifted floral aromas. There are base notes of savoury spice, becoming more pronounced on the palate. The old vines deliver concentration, with lashings of red fruit and juicy tannins." - Martial Carré, Winemaker.
