The wines of Chablis are loved the world over for their intense mineral character, lifted aromatics and their lively energy. This is the domaine's 'basic' Chablis but to refer to it as 'basic' is far from fair. It is just simpler when compared to the 1er and Grand Cru wines they produce. Crafted from vineyards planted on both sides of the Serein River, this wine has a lovely nose of lemon barley with a little honey, a lighter floral note, loads of freshness and nice weight to the fruit. It'll keep for 5 years without much fuss and is amazing when paired with a goats' cheese and spinach tart.

The Billaud-Simon domaine has had great success due to their collection of first class vineyards, access to the latest winemaking technology and decades of family knowledge passed down by one generation to the next. The estate was established in 1815 and the ambition is to produce wines that give the most accurate rendering of the soil and lie of the land.
