The wines of Bordeaux are all about balance, and we know all wine is, but properly made Bordeaux is all about restraint - not excess. That's not to say you can't make a modern wine without maintaining these fundamentals, as Grand Tayac proves. Lovely lifted aromatics, delicious dense fruit, integrated oak (the best money can buy) and a finish that lasts and lasts. A winner with duck, beef and wild boar sausages - probably not simultaneously. A hard one to lie down though, such is its appeal!

Eric and Jacques Boissenot
Jacques Boissenot and his son Eric are arguably the most important father and son team in wine-making.They are the Médoc's leading consultant winemakers, responsible for the great majority of the region's famous classed growths, and all the first growths. Eric sums up their philosophy, "You must capture what there is in that cru, its terroir, its expression, its faults and qualities, and then handle it delicately, to guide it to its most beautiful expression."
