The Spirit

After triple distillation, as is the standard practice at West Cork Distillery, crafting a wonderfully pure, characterful and signature smooth new make spirit, this single malt expression is patiently aged in first fill bourbon barrels. There are many decisions and options available once the spirit has reached the desired maturity and in this case the team have elected to finish the spirit in some top-class port barrels that are hand-picked from legendary port producer Quinta Da Boeira. The finished whiskey is rich, full of dried fruit character and deliciously sweet to finish.

The Distillery

West Cork Distillery

West Cork Distillery was founded in 2003 by three friends, who shared a passion for Irish Whiskey. They embarked on a journey together with a simple goal; to craft high-quality unique spirits that were true to the heritage and history of the local area. Founders John O'Connell, Ger McCarthy and Denis McCarthy are still at the heart of the company and continue to share their love of all things West Cork and whiskey.
